...why can't we be doing THIS for sound

Its really amazing what can be done with the technology that currently exists. Is anyone else frustrated that despite what can be done (as this video so beautifully demonstrates), we are still using interfaces derived from antiquated technology? Obviously the use of GUI that resembled mixing boards and other analogue audio equipment was useful in helping sound engineers (and other audio professionals) make the jump to working digitally...but now that the digital format has become ubiquitous, why isn't there a wider variety of GUIs?
